Start-End Times for Tickets

Hello...

I will be arriving in Paris (CDG) on a Sunday at 9am and departing CDG Tuesday morning at 11:30a.

When I buy a 2-day Metro pass on that Sunday morning around 10a, will that take me to 10a of Tuesday morning or to midnight of Monday night? I can't tell if they are 48 hour passes or to midnight on following day.

If they are 48-hour passes, am I correct in thinking that I should also just buy two single rides on RER-B from CDG to Gare du Nord and back for my transportation to/from airport?

The Paris Visite 2-day expires at the end of the second day of use, not 48 hours later.  In your case it would end Monday midnight if you start using Paris Visite ticket anytime Sunday.
 
Your assumption is correct: you should buy a single RER ticket for the RER B from Paris to CDG on Tuesday and use the Paris Visite from arrival till Monday night.  I'm assuming you won't be touring around much Tuesday morning before your flight.
